
To celebrate the countdown to Christmas we have teamed up with a fellow coastal brand, Mermaid Gin, to give you an extra festive cocktail recipe.
Mermaid Gin is handcrafted on the Isle of Wight using ten ethically sourced botanicals, with a hint of sea air from the locally foraged rock samphire. Not only is it delicious but the award-winning brand consider each sustainable element of their packaging and support marine conservation projects, to preserve the environment of mermaids (as well as other sea life)!
The recipe we've created is a twist on the classic Tom Collins but made just that little bit more healthy.
How to make a Rhubarb Collins:

Add into a tall glass:
- 50ml Mermaid Gin
- 20ml lemon juice
- 10ml cinnamon syrup
- Top with Rhubarb and Apple Feel Good drinks.
Cinnamon syrup:
- 2:1 Demerara sugar:water.
- Heat until boiling.
- Add cinnamon sticks and break up.
